Freezing a batch is not the same duty as holding it. Most of the energy goes into the phase change, which is why blast capacity is several times a storage room of the same size.
Latent heat is where the energy goes
Removing sensible heat from +10 °C down to the freezing point is a small part of the job. The phase change itself — turning the water in the product to ice — typically accounts for well over half the total energy, and it happens at essentially constant temperature. This is why a room that comfortably holds −25 °C still cannot freeze a batch quickly.
Freezing time is set by thickness, not mass
The calculation above gives the refrigeration duty. How long freezing actually takes is governed by how fast heat can travel out of the product, which depends on the thickness of the thickest piece and the air velocity over its surface. Doubling the airflow helps; doubling the block thickness roughly quadruples the time.
Why pull-down time matters commercially
Slow freezing forms large ice crystals that rupture cell walls. The damage is invisible while frozen and appears as drip loss and texture change on thawing — which is a price and complaint issue, not a food safety one. It is also entirely determined at the freezing stage and cannot be recovered later.
